Ordinary Apples Rich in Antioxidants
Agriculture and Agri-Food Canada researchers have ranked the eight apple varieties most commonly eaten in Canada by their antioxidant content. Many fruits contain more antioxidants than apples, but popularity and year-round availability make them an important source of antioxidants. The red delicious apple tested highest and in all apples the peel contained the greatest amounts of the healthful chemicals.

The following was sent to me by email:
My husband is allergic to fresh apples (mouth and gum tingle) but can eat cooked apples. I have started to cook apples (applesauce) while keeping the skin on. Recently I have switched to Red Delicious because of the reports of more antioxidants.
My question is: does cooking apples (with skin on) destroy the 2 major antioxidants listed in the reports?
